Abuelita means Grandma and this cookie is for Annie's! A brownie cookie made with cinnamon cashew cream, Mexican cacao, Mexican vanilla, chocolate chips and pecans. All stuffed with a vanilla bean vegan cheesecake. Baked then brulee'ed to create a hard crunchy shell.
